Miniature Meatloaf Recipe
This is an incredibly easy yet very tasty meatloaf for 1 or 2 depending on how big of portion you like to eat. I sometimes subsitute chili sauce for the ketchup to give it a little zing. Enjoy

Ingredients
  • 2 saltine crackers
  • 1 cup cubed raw beef
  • 2 pieces onion
  • 2 sprigs parsley
  • 1 egg
  • 1 tablespoon ketchup
  • 2 dashes pepper
  • 2 tablespoon ketchup

Directions
  1. Place crackers in food processor and process until finely crumbled
  2. Add 1/2 cup meat then cover and process 4 quick pulses.
  3. Remove cover and add remaining meat, onion and parsley.
  4. Cover and process 6 quick pulses.
  5. Remove cover and add egg, 1 tablespoon ketchup and pepper.
  6. Cover and process 2 fast pulses then pat into miniature loaf pan.
  7. Bake at 350 for 30 minutes.
  8. Add 2 tablespoons ketchup to top and continue to bake 20 additional minutes.

This is a great idea. I hate making a big meatloaf for just the two of us so I usally do them when the kids are here to help eat it up.
