Known in Europe as “Cyclist Sauce". Combining White bean puree with fresh herbs and tomato added to fresh pasta is a favorite among riders in the Tour de France during mountain stages.

Ingredients
  • 2 Cups White cheek sneak base- Beans cooked in Chix Stock with a fresh Herb de Provence
  • 1 teaspoon olive oil
  • 1/2 whole peppers -- chopped
  • 1 med bunch fresh Basil chopped
  • 1 small bunch fresh Oragano chopped
  • 2 large tomato -wedged
  • 2 cloves garlic -- minced
  • 1 teaspoon your favorite hot sauce

Directions
  1. In a blender or food processor puree the White Cheek Sneak Base and tomato.
  2. In a sauce pan over medium heat the olive oil and add the peppers.
  3. Add bean puree and tomatoes and stir well. Bring to soft boil
  4. Add garlic and hot sauce and cook for 5 minutes stirring continuously.
  5. Add to pasta of your choice.
  6. Toss In Basil and Oragano. Toss again
  7. Finish with a nice grated parmesan cheese.
  8. If mixture gets too dry and you prefer it a bit looser, add touch of water while cooking.
