Chicken Enchilada Casserole Recipe
My mom finally handed down this flavorful cheesy casserole recipe to me after several years of begging. It is slightly time consuming, but absolutely worth every second.

Ingredients
  • 2 Tbsp. Olive Oil
  • 1 C. Chopped Onion
  • 2 tsp. minced Garlic
  • 1/2 C. each Diced Red, Green, and Yellow pepper
  • 1 Bottle of Enchilada Sauce
  • 2 C. Sour Cream
  • 2 C. Shredded Cheddar
  • 1 bunch sliced Green Onion
  • 1 tsp. Cumin
  • 1 tsp. each Salt and Pepper
  • 4 C. shredded Cooked Chicken
  • 12 6 in. Tortillas cut into 1 in. strips
  • 1 1/2 C. Monterey Jack Cheese
  • 1/2 tsp. Cayenne Pepper

Directions
  1. Preheat oven to 350
  2. Heat olive oil in large saute pan
  3. Saute chopped onions for 5 minutes
  4. Add garlic and peppers to onions and saute 3-4 min until soft
  5. Add enchilada sauce to mix and bring to a boil
  6. Meanwhile, in a separate bowl combine sour cream, cheddar cheese, green onion, cumin, salt, and pepper.
  7. Layer 1/2 tortillas on the bottom of a greased 9x13 baking dish.
  8. Pour on 1/2 enchilada sauce mixture followed by 1/2 of the chicken and 1/2 of the sour cream mixture
  9. Repeat
  10. Bake for 30 minutes
  11. Combine Monterey Jack with cayenne pepper
  12. Top casserole with cheese mixture
  13. Bake an additional 30 minutes.
