How to make it

  • Preheat oven to 250C
  • Melt butter and sugar in a pot, long enough so it combines and gets thick but not so it boils.
  • Add flour, cup by cup until the mixture is thick and doughy enough to handle.
  • Flour a baking tray (unless you use baking paper) and flatten out mixture.
  • Bake for 20ish mins or until they are golden and springy to tough.
  • Cool and serve

    Wow, America's Test Kitchen Brown Sugar Cookies use only 2 cups of flower and1 3/4 cups of brown sugar. Now they are definitely sweet and definitely brown sugar cookies, but to 4 cups of flour, really...only a couple of good handfuls of brown sugar?
