Peachy Chipotle Salsa

- 2 cups diced ripe peaches shopping list
- ¾ cup fresh lemon juice shopping list
- ½ cup red onion, diced shopping list
- ½ cup red bell pepper, diced shopping list
- ¼ cup canned chipotle chili peppers, seeded and minced shopping list
- 1 ½ teaspoons minced garlic shopping list
- 1 ½ teaspoon toasted and crushed cumin seeds shopping list
- ½ teaspoon minced fresh oregano shopping list
- 1/8 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
How to make it
- Combine all ingredients in a large bowl. Cover and refrigerate for up to 3 days. Delicious over baked fish, chicken or pork.
- Each serving provides: An excellent source of vitamin C and a good source of vitamin A.
