Quick Stir Fry Pork And Veggies Recipe
This is a quick and flavorful dish that is light yet satisfying. I cook this when I have to have dinner in a hurry since the pork cooks very quickly. This is one of my families favorites!

Ingredients
  • 3 boneless pork loin chops, cut across the grain into thin slices
  • 3 tablespoons olive oil
  • 1 cup celery, sliced on the diagonal
  • 1 onion, sliced
  • 2 medium carrots, sliced on the diagonal
  • 2 yellow squash, sliced on the diagonal
  • 2 zucchini, sliced on the diagonal
  • 1 cup sliced mushrooms
  • 1 tablespoon Italian seasoning
  • 1 tablespoon garlic powder
  • salt and cracked black pepper to taste
  • 1/4 cup soy sauce

Directions
  1. Heat oil in large skillet or wok.
  2. Add pork and stir fry for 3 to 5 minutes or until no longer pink
  3. Add vegetables, seasonings and soy sauce.
  4. Continue to stir fry vegetables for 2 to 3 minutes.
  5. Cover and cook 2 minutes longer.
  6. Serve with steamed rice or cooked noodles if desired.
