Ingredients

PORK:

2tsp.grated lime rind

2Tbs fresh lime juice

1Tbs peanut butter

2tsp sugar

2tsp fish sauce

1/2tsp curry powder

1/4tsp salt

1/4tsp ground coriander

2 garlic cloves minced

1lb. pork tenderloin,trimmed and cut into 16(4" long) strips

SAUCE:

11/2Tbs sugar

1Tbs chopped fresh cilantro

2Tbs seasoned rice vinegar

2Tbs fresh lime juice

2Tbs mirin(sweet rice wine)1tsp fish sauce

1 serrano chile,seeded and finely chopped

1Tbs dry-roasted peanuts,chopped

Directions

Prepare grill to med-high

To prepare pork,combine first 9 ingredients in a med. bowl,stirring till smooth. Add pork to bowl;toss well to coat. Let stand at room temp. 15 mins.

To prepare sauce,combine 11/2Tbs sugar with next 6 ingredients(through chile) stirring with a whisk.Stir in peanuts.

Thread 2 pork pieces lengthwise onto each of 8(12" )skewers. Place skewers on a grill rack coated with cooking spray;grill 3 mins on each side or until done. Serve with sauce
