Pork Sate with Peanut-Mirin Sauce

- 2tsp.grated lime rind shopping list
- 2Tbs fresh lime juice shopping list
- 1Tbs peanut butter shopping list
- 2tsp sugar shopping list
- 2tsp fish sauce shopping list
- 1/2tsp curry powder shopping list
- 1/4tsp salt shopping list
- 1/4tsp ground coriander shopping list
- 2 garlic cloves minced shopping list
- 1lb. pork tenderloin,trimmed and cut into 16(4" long) strips shopping list
- SAUCE: shopping list
- 11/2Tbs sugar shopping list
- 1Tbs chopped fresh cilantro shopping list
- 2Tbs seasoned rice vinegar shopping list
- 2Tbs fresh lime juice shopping list
- 2Tbs mirin(sweet rice wine)1tsp fish sauce shopping list
- 1 serrano chile,seeded and finely chopped shopping list
- 1Tbs dry-roasted peanuts,chopped shopping list
How to make it
- Prepare grill to med-high
- To prepare pork,combine first 9 ingredients in a med. bowl,stirring till smooth. Add pork to bowl;toss well to coat. Let stand at room temp. 15 mins.
- To prepare sauce,combine 11/2Tbs sugar with next 6 ingredients(through chile) stirring with a whisk.Stir in peanuts.
- Thread 2 pork pieces lengthwise onto each of 8(12" )skewers. Place skewers on a grill rack coated with cooking spray;grill 3 mins on each side or until done. Serve with sauce
