How to make it

  • Cut tomatoes in half and toss with rest of ingredients. Make dressing with olive oil, vinegar, salt & pepper and toss with veggies.
  • NOTE: For the prettiest presentation, use yellow tomatoes and red peppers or red cherry tomatoes and yellow peppers.
  • Dice finer and use as topping for bruschetta (grilled french bread slices) for a great appetizer.
