Tomato Mozzarella Salad

- 2 pints cherry tomatoes, or miniature yellow plum tomatoes shopping list
- 1/2 small red onion, sliced thinly shopping list
- 1 pound mozzarella cheese, or feta, cubed shopping list
- 3 stalks fresh basil leaves, whole, if small, chopped, otherwise shopping list
- 2 large yellow bell peppers, roasted, peeled and cubed shopping list
- 1/2 cup olive oil shopping list
- 1/4 cup red wine vinegar, or balsamic vinegar shopping list
- fresh ground black pepper shopping list
- salt, Jane's crazy salt, to taste shopping list
How to make it
- Cut tomatoes in half and toss with rest of ingredients. Make dressing with olive oil, vinegar, salt & pepper and toss with veggies.
- NOTE: For the prettiest presentation, use yellow tomatoes and red peppers or red cherry tomatoes and yellow peppers.
- Dice finer and use as topping for bruschetta (grilled french bread slices) for a great appetizer.

If nothing else I always grow tomatoes and basil every summer...this recipe is a perfect way to enjoy them at there best...great post.
