Chicken With Lemon And Basil

An Italian twist to fried chicken. I use chicken tenders or chicken breasts, but it would be equally good with all parts of the chicken. Makes a great left-over snack for frig-raiding-teenagers! I serve this as the meat dish to accompany a (meatless) pasta.
Ingredients
- 1-2 pounds chicken tenders shopping list
- Italian bread crumbs shopping list
- cooking oil shopping list
- 3-4 lemons shopping list
- handful of fresh basil shopping list
How to make it
- Heat cooking oil in heavy skillet
- wash and trim chicken tenders
- lightly coat with Italian bread crumbs
- fry chicken tenders until golden brown
- thinly slice lemon rounds ~ scatter on a pretty serving platter
- using tongs, remove the browned chicken and place on top of the lemons
- tuck whole basil leaves around the chicken and lemon slices
- decorate with more lemon and basil
