Thin Mint Cookies

- Cookies: shopping list
- 1 18oz. package fudge cake mix shopping list
- 3 tbl shortening, melted shopping list
- 1/2 cup flour shopping list
- 1 egg shopping list
- 2 teas Mexican Cinammon shopping list
- 3 tbl water shopping list
- Dip: shopping list
- 2 12oz. bags semi-sweet chocolate chips shopping list
- 2 teas. peppermint extract shopping list
- 6 tbl shortening shopping list
How to make it
- Cookie Dough:
- Combine all cookie ingredients in large bowl.
- Add water a little bit at a time until dough forms.
- Cover and refrigerate for at least 2 hours.
- Preheat oven to 350.
- Divide dough into about 3 or 4 balls.
- Roll out onto slightly floured surface until pie crust thin.
- Using a cutter (1 1/2" diameter), cut out cookies and place on cookie sheets that have been lightly sprayed with non-stick spray.
- Bake for 10 minutes.
- Remove and cool completely before dipping.
- Chocolate Dip:
- Combine chips and shortening.
- Microwave at 30 second intervals on high until completely melted and smooth.
- Add extract and stir in until totally blended.
- Use a fork to dip each cookie, tapping to get excess chocolate off.
- Place cookies on waxed paper on cookie sheets.
- Get one sheet full, place in refrigerator while dipping the rest.
- Keep cookies cool (if they last!)
