How to make it

  • Stir orzo into a hot, dry nonstick, pan.
  • Cook 2 minutes, then add garlic. Cook 1 minute longer.
  • Pour in the juice and water. Bring to a boil.
  • Reduce heat to low and simmer (uncovered) 7 minutes.
  • Stir in, zucchini, carrot and pepper.
  • Cook 7 minutes longer, or until liquid has been absorbed and orzo is tender.
  • Stir in herbs and pepper. Serve.
