Tomato - Herb Orzo Toss

- 1 cup uncooked orzo pasta shopping list
- 2 cloves garlic, crushed shopping list
- 1 cup tomato juice shopping list
- 3/4 cup water shopping list
- 1 medium zucchini, diced shopping list
- 1 medium carrot, diced shopping list
- 1/2 medium red pepper, diced shopping list
- 2 tbsp fresh basil, shredded shopping list
- 1/2 tbsp dried oregano shopping list
- black pepper to taste shopping list
How to make it
- Stir orzo into a hot, dry nonstick, pan.
- Cook 2 minutes, then add garlic. Cook 1 minute longer.
- Pour in the juice and water. Bring to a boil.
- Reduce heat to low and simmer (uncovered) 7 minutes.
- Stir in, zucchini, carrot and pepper.
- Cook 7 minutes longer, or until liquid has been absorbed and orzo is tender.
- Stir in herbs and pepper. Serve.
