Ponzu Shiitake Soba

- 8 oz dry soba noodles shopping list
- 1/4 cup water shopping list
- 1 1/2 cups shiitake mushrooms, stemmed and halved shopping list
- 1 1/2 cups button mushrooms, thick-sliced shopping list
- 1/2 large red pepper, diced shopping list
- 8 cups broccoli florets shopping list
- 1/2 cup water shopping list
- 1/4 cup ponzu sauce shopping list
- 1/4 cup water shopping list
- 2 tsp brown sugar shopping list
- 1/4 tsp red pepper flakes shopping list
How to make it
- Cook soba noodles in a large pot of salted water. Drain and keep hot.
- Heat 1/4 cup of water in a deep, lidded pan.
- Add mushrooms and pepper, cook 4 minutes, stirring.
- Add broccoli and water, stirring. Cover pan and steam 5 minutes, stirring occasionally.
- Combine ponzu sauce, remaining 1/4 cup water, brown sugar and pepper flakes. Pour over vegetables in pan and bring to a boil.
- Cook for 2 minutes, covered.
- Divide noodles between 4 serving dishes, top evenly with pan contents and serve.
