How to make it

  • Cook soba noodles in a large pot of salted water. Drain and keep hot.
  • Heat 1/4 cup of water in a deep, lidded pan.
  • Add mushrooms and pepper, cook 4 minutes, stirring.
  • Add broccoli and water, stirring. Cover pan and steam 5 minutes, stirring occasionally.
  • Combine ponzu sauce, remaining 1/4 cup water, brown sugar and pepper flakes. Pour over vegetables in pan and bring to a boil.
  • Cook for 2 minutes, covered.
  • Divide noodles between 4 serving dishes, top evenly with pan contents and serve.
