Ponzu Shiitake Soba Recipe
Buckwheat noodles, broccoli, two types of mushrooms and ponzu sauce combine to make a seriously delicious side to your latest Asian meal!

Ingredients
  • 8 oz dry soba noodles
  • 1/4 cup water
  • 1 1/2 cups shiitake mushrooms, stemmed and halved
  • 1 1/2 cups button mushrooms, thick-sliced
  • 1/2 large red pepper, diced
  • 8 cups broccoli florets
  • 1/2 cup water
  • 1/4 cup ponzu sauce
  • 1/4 cup water
  • 2 tsp brown sugar
  • 1/4 tsp red pepper flakes

Directions
  1. Cook soba noodles in a large pot of salted water. Drain and keep hot.
  2. Heat 1/4 cup of water in a deep, lidded pan.
  3. Add mushrooms and pepper, cook 4 minutes, stirring.
  4. Add broccoli and water, stirring. Cover pan and steam 5 minutes, stirring occasionally.
  5. Combine ponzu sauce, remaining 1/4 cup water, brown sugar and pepper flakes. Pour over vegetables in pan and bring to a boil.
  6. Cook for 2 minutes, covered.
  7. Divide noodles between 4 serving dishes, top evenly with pan contents and serve.
