Vegan Blueberry Peach Gel Recipe
AKA Kanten, this is a delicious and summery Jell-O like dessert that uses agar agar and fruit juice to hold fresh peach chunks and blueberries.

Ingredients
  • 1 large peach, chopped
  • 2//3 cup blueberries
  • 1 cup peach nectar
  • 1 cup water
  • 2 tbsp agar agar flakes

Directions
  1. Pour fruit into a shallow bowl (glass is nice for presentation).
  2. Pour juice, water and agar flakes into a small pot.
  3. Bring to a boil then reduce heat and simmer 8 minutes, stirring occasionally.
  4. Pour over the fruit.
  5. Chill 2 hours before serving.

The agar agar flakes are what?? Where do I get them? This sounds great and I'd like to try it.


Agar is vegetarian gelatin essentally, derived from seaweed. Eden organics makes a variety. You can find it in health food stores or online.
