Fruity Blintz Casserole Recipe
This is a unique recipe. When I obtained this in 1983 I had no clue what a blintz even was. This was a truly delightful experience for me.

Ingredients
  • 1 pkg frozen fruit blintzes (6 per pack - comes in cherry, cheese, blueberry or apple)
  • 1/2 stick butter
  • 2 eggs
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/4 cup orange juice
  • 6 oz. sour cream

Directions
  1. Grease a 6 x 9 inch baking pan.
  2. Arrange the blintzes in a row.
  3. Put all the other ingredients in a blender; blend approximately 60 seconds or until smooth and well mixed.
  4. Pour this mixture over the blintzes.
  5. Cover and refrigerate overnite or longer.
  6. Bake at 350 degrees for 45 minutes or till lightly browned.
  7. Recipe can be doubled, tripled, etc., just use a large enough pan so they are not crowded.

You are so cute. This recipe is much like a fraternity's secret handshake that every member knows and it's no longer a secret. I cannot think of any Jewish mothers who don't make this one and then kvetch (Complain) about their weight!!!
