Broccoli And Cauliflower Bake Recipe
This dish is popular with my family at get-togethers, ie. Christmas, and is perfect with any baked meats. A definite favourite!

Ingredients
  • 500g broccoli, cut in florets
  • 1 small cauliflower, cut in florets
  • Sauce:
  • 90g butter
  • 2 onions, finely chopped
  • 2 tbspns plain flour
  • 2 tbspns brown sugar
  • 1 tspn dry mustard
  • 1 1/2 cups milk
  • 1 cup lite sour cream
  • 2 tbspns parsley

Directions
  1. Steam, microwave or boil vegetables until just ready. Arrange in a long dish (I usually use my lasagne dish), alternating between the green broccoli and the white cauliflower. Set aside.
  2. In a saucepan, melt butter and saute onions until soft.
  3. Add flour and sugar, stirring well with a wooden spoon for 1 minute to 'cook' the flour.
  4. Gently and slowly add the milk, stirring well to prevent lumps from forming. When the mixture boils and thickens, lower heat to simmer, stirring constantly.
  5. Add in sour cream, stir in parsley. Pour mixture over the vegetables and bake in a moderate oven for 30 minutes, or until lightly brown on top. Cover with foil, if necessary. This dish reheats well in a slow oven, covered with foil to prevent drying out.
