Broccoli and Cauliflower Bake

- 500g broccoli, cut in florets shopping list
- 1 small cauliflower, cut in florets shopping list
- Sauce: shopping list
- 90g butter shopping list
- 2 onions, finely chopped shopping list
- 2 tbspns plain flour shopping list
- 2 tbspns brown sugar shopping list
- 1 tspn dry mustard shopping list
- 1 1/2 cups milk shopping list
- 1 cup lite sour cream shopping list
- 2 tbspns parsley shopping list
How to make it
- Steam, microwave or boil vegetables until just ready. Arrange in a long dish (I usually use my lasagne dish), alternating between the green broccoli and the white cauliflower. Set aside.
- In a saucepan, melt butter and saute onions until soft.
- Add flour and sugar, stirring well with a wooden spoon for 1 minute to 'cook' the flour.
- Gently and slowly add the milk, stirring well to prevent lumps from forming. When the mixture boils and thickens, lower heat to simmer, stirring constantly.
- Add in sour cream, stir in parsley. Pour mixture over the vegetables and bake in a moderate oven for 30 minutes, or until lightly brown on top. Cover with foil, if necessary. This dish reheats well in a slow oven, covered with foil to prevent drying out.
