Ingredients
  • 1 lb. of Pasta (Short or long, this sauce works well with both.)
  • 1-2 Tbs Extra Virgin Olive Oil
  • 1 Onion, diced
  • 2 Cloves of Garlic
  • 1 medium can Whole Peeled Tomatoes (Preferably of the San Marzano variety)
  • 8-10 leaves of fresh Basil
  • 1 Tbs. Crushed Red Pepper

Directions
  1. Start a pot of water boiling for the pasta.
  2. In a small saute pan, cook the diced onion in the olive oil until softened.
  3. Add the Garlic to the sauce and cook for another 2 min just to get the rawness out.
  4. Put the can of tomatoes and crush by hand into the pan.
  5. Season with salt and pepper and add the Crushed Red Pepper.
  6. Once pasta is cooked just "al dente", drain and reserve 1/4 cup of the pasta water.
  7. Add the 1/4 cup of pasta water to the sauce and stir to combine.
  8. Add the Pasta to the pan of sauce and toss to coat.
  9. Now you might think, "There's not enough sauce!" But you'd be wrong. Italians say "condimento" when referring to the sauce for pasta. It should be used just like a condiment...In other words, your pasta shouldn't be swimming in the sauce. Remember, it's "pasta" not "minestrone" (soup).

This is a great recipe .. Been missing seeing you here my friend! Was up your way the past few months to the VA hospital.. Do me a favor and send a list of good places to eat on that side of town.. The hospital puts us up right there on I-10..
