How to make it

  • Start a pot of water boiling for the pasta.
  • In a small saute pan, cook the diced onion in the olive oil until softened.
  • Add the Garlic to the sauce and cook for another 2 min just to get the rawness out.
  • Put the can of tomatoes and crush by hand into the pan.
  • Season with salt and pepper and add the Crushed Red Pepper.
  • Once pasta is cooked just "al dente", drain and reserve 1/4 cup of the pasta water.
  • Add the 1/4 cup of pasta water to the sauce and stir to combine.
  • Add the Pasta to the pan of sauce and toss to coat.
  • Now you might think, "There's not enough sauce!" But you'd be wrong. Italians say "condimento" when referring to the sauce for pasta. It should be used just like a condiment...In other words, your pasta shouldn't be swimming in the sauce. Remember, it's "pasta" not "minestrone" (soup).

    This is a great recipe .. Been missing seeing you here my friend! Was up your way the past few months to the VA hospital.. Do me a favor and send a list of good places to eat on that side of town.. The hospital puts us up right there on I-10..
