Easy Pasta Pomodoro Arrabiata

- 1 lb. of pasta (Short or long, this sauce works well with both.) shopping list
- 1-2 Tbs extra virgin olive oil shopping list
- 1 onion, diced shopping list
- 2 cloves of garlic shopping list
- 1 medium can Whole Peeled tomatoes (Preferably of the San Marzano variety) shopping list
- 8-10 leaves of fresh basil shopping list
- 1 Tbs. Crushed red pepper shopping list
How to make it
- Start a pot of water boiling for the pasta.
- In a small saute pan, cook the diced onion in the olive oil until softened.
- Add the Garlic to the sauce and cook for another 2 min just to get the rawness out.
- Put the can of tomatoes and crush by hand into the pan.
- Season with salt and pepper and add the Crushed Red Pepper.
- Once pasta is cooked just "al dente", drain and reserve 1/4 cup of the pasta water.
- Add the 1/4 cup of pasta water to the sauce and stir to combine.
- Add the Pasta to the pan of sauce and toss to coat.
- Now you might think, "There's not enough sauce!" But you'd be wrong. Italians say "condimento" when referring to the sauce for pasta. It should be used just like a condiment...In other words, your pasta shouldn't be swimming in the sauce. Remember, it's "pasta" not "minestrone" (soup).

This is a great recipe .. Been missing seeing you here my friend! Was up your way the past few months to the VA hospital.. Do me a favor and send a list of good places to eat on that side of town.. The hospital puts us up right there on I-10..
