Watergate Salad Pistachio Pudding Recipe
This is a recipe that one of my aunts used to make all the time for picnics and BBQs when I was young. It's very sweet. I've always preferred this to the more popular Ambrosia Salad.

Ingredients
  • 1 - 16 oz container Cool Whip whipped topping
  • 2 pkgs instant pistachio pudding mix
  • 1 - (15-20 oz.) can crushed pineapple, drained, but reserve some of the liquid
  • 3/4 cup chopped walnuts or pecans
  • 1 - 10 oz jar maraschino cherries, quartered, reserve some of the cherry juice
  • 1/2 cup chopped dates
  • 4 cups miniature marshmallows

Directions
  1. Spoon Cool Whip into a large bowl. Sprinkle dry pudding mix on top.
  2. Add all of the other ingredients, stir well. Add some of the pineapple liquid and some of the cherry juice so the mixture won't be so dry.
  3. Store tightly covered in the refrigerator until ready to serve (this is best left to sit for a few hours or overnight in the fridge for flavors to meld together)
  4. Variation - you can add some canned mandarin oranges to this too.
