How to make it

  • Peel carrots, and cut into 1/8 inch slices
  • Put carrots into put, cover with cold water, and bring to boil
  • Cook until tender (adjust to taste)
  • Drain, and let cool
  • Remove seeds from chili peppers, rinse well and drain
  • Cut chili's into 1/8 inch slices
  • Combine remaining ingredients into a marinade, and mix well
  • Marinate carrots, and chilies for 12 to 24 hours.
  • Makes about 3 cups
  • Great as a side, on hot dogs for something really different. Possibly in a signature Dagwood type sandwich..
  • Adds color to a plate and is healthy
  • Keeps well too...
  • Only for those who like some heat.
