Marinated Carrot Condiment

- 1 lb carrots shopping list
- 1/2 cup canned jalapeno chilis shopping list
- juice from canned jalapeno chilis shopping list
- 1/3 cup white vinigar shopping list
- 2 1/2 cups water shopping list
- 1 teaspoon whole peppercorns shopping list
- 1/2 cup slices onions shopping list
- pinch of oregano shopping list
- 1 bay leaf shopping list
- 3 tablespoons salad oil shopping list
- 1 tablespoon salt shopping list
- 1/4 teaspoon minced fresh garlic shopping list
How to make it
- Peel carrots, and cut into 1/8 inch slices
- Put carrots into put, cover with cold water, and bring to boil
- Cook until tender (adjust to taste)
- Drain, and let cool
- Remove seeds from chili peppers, rinse well and drain
- Cut chili's into 1/8 inch slices
- Combine remaining ingredients into a marinade, and mix well
- Marinate carrots, and chilies for 12 to 24 hours.
- Makes about 3 cups
- Great as a side, on hot dogs for something really different. Possibly in a signature Dagwood type sandwich..
- Adds color to a plate and is healthy
- Keeps well too...
- Only for those who like some heat.
