Marinated Carrot Condiment Recipe
An OLD recipe I had for a marinated carrot side dish. Served cold, its a dish with some heat, with a Mexican twist to it. Again.. a Love it or Hate it dish..

Ingredients
  • 1 lb Carrots
  • 1/2 cup canned jalapeno chilis
  • Juice from canned jalapeno chilis
  • 1/3 cup white vinigar
  • 2 1/2 cups water
  • 1 teaspoon whole peppercorns
  • 1/2 cup slices onions
  • pinch of oregano
  • 1 bay leaf
  • 3 tablespoons salad oil
  • 1 tablespoon salt
  • 1/4 teaspoon minced fresh garlic

Directions
  1. Peel carrots, and cut into 1/8 inch slices
  2. Put carrots into put, cover with cold water, and bring to boil
  3. Cook until tender (adjust to taste)
  4. Drain, and let cool
  5. Remove seeds from chili peppers, rinse well and drain
  6. Cut chili's into 1/8 inch slices
  7. Combine remaining ingredients into a marinade, and mix well
  8. Marinate carrots, and chilies for 12 to 24 hours.
  9. Makes about 3 cups
  10. Great as a side, on hot dogs for something really different. Possibly in a signature Dagwood type sandwich..
  11. Adds color to a plate and is healthy
  12. Keeps well too...
  13. Only for those who like some heat.
