Fresh Vegetable Turnovers

- 4c finely chopped mixed fresh vegetables; such as cauliflower shopping list
- broccoli, snowpeas, onions, carrots, celery, peppers, etc. shopping list
- 1T melted butter shopping list
- 1T vegetable oil shopping list
- 8 sheets of phyllo pastry shopping list
- 1c cooked rice shopping list
- 1c creamy goats cheese (or any cheese you prefer) shopping list
- 1/3c fresh chopped basil shopping list
- salt and pepper shopping list
How to make it
- Steam veggies until bright in color; rinse under cold water and drain well.
- Stir melted butter and oil together. Lightly brush some over 1 sheet of the phyllo (cover remaining with a damp towel) fold in half lengthwise and brush top surface. Mound 1/2c of the veggies at one end, slighty off center. Top with 2T of the rice, 2T of the cheese and about 2tsp of the basil and some salt and pepper; fold as if folding a flag until it forms a triangle. Brush with butter and oil mixture and place on a ungreased baking sheet. Repeat with remaining phyllo.
- Bake at 375F(190C) until browned, about 12-15mins.
