Really easy and quick, but elegant dish with few ingredients. Everybody who likes trout - will love this!

Ingredients
  • (please excuse my english)
  • Trout for aprox. 4 persons
  • Juice from 1 lime
  • salt and pepper
  • 0,4 cup of mango chutney
  • 3 tbls of pistache nuts, cut
  • fresh coriander, cut

Directions
  1. Heat the oven to 365°F
  2. Put the trout fillets in a oven safe container, drizzle the lime juice over it and season with salt and pepper.
  3. salve the mango chutney over the fillets and sprinkle the nuts over it.
  4. Bake for 10-15 minuets.
  5. Take it out of the oven and sprinkle the coriander over it.
  6. Serve with salat and cuscus.

Mango chutney on fresh caught trout is a perfect for a summer meal. This could be easily made on the grill in a foil pack.
