Mediterranean Beef Salad Recipe

Ingredients

Cold leftover beef

1 medium tomato

1 small mild onion

1 jar of capers (optional)

1/2 cup pitted kalamata olives (optional)

(I usually use the capers OR the olives, with both it would be too salty and neither flavor would really get a chance to shine)

1 cucumber, peeled and sliced

2/3 cup olive oil

1/2 cup good vinegar

1 T good mustard

1-3 cloves of garlic, crushed.

Salt and pepper to taste

1t - 1T honey, to taste

Directions

Shred or finely chop the beef and onion

Cut the tomato into large, chunky pieces

Combine beef, tomato, onion, cucumber and the optional ingredients in a salad bowl.

Combine all the remaining ingredients in a small bowl or shaker jar, and whisk or shake to blend well.

Drizzle the salad with the dressing and serve.
