Summer Tomato Fruit Salsa

- 5-7 fresh tomatoes (from someone's garden - not a store) shopping list
- 1+ Large Valdalia or other sweet onion shopping list
- 2-3 fresh peaches shopping list
- 1-3 Fresh plums shopping list
- 1-? Fresh Jalepenos shopping list
- 1-2 Green/Red/yellow bell peppers shopping list
- Lots of cilantro shopping list
- juice from 2-4 limes shopping list
- Some olive oil (sometimes I use none) shopping list
- 1-3 tsp Ground Corriander (optional) shopping list
- salt and Pepper (freshly ground) to taste shopping list
- tortilla chips (or whatever you like to eat salsa with) shopping list
How to make it
- Chop all vegetables into salsa-sized portions
- Chop cilantro as fine as you like (but not too fine)
- Put in a big bowl and add lime juice, olive oil, corriander (if using).
- Add any additional spices not mentioned, but be careful, the key is "fresh salsa"
- Mix gently and refrigerate (or not).
- Serve with chips or to accompany grilled chicken or fish.
- Modify ingredient list to suit your taste, but the peach adds sweetness and the plum adds a bit of tartness and mouthfeel. Mangos are a good substitute if you cannot find fresh peaches or plums.
- Do not even attempt in the winter or with store-bought vegetables. I only make it 2-3 month a year (sadly).
