How to make it

  • Chop all vegetables into salsa-sized portions
  • Chop cilantro as fine as you like (but not too fine)
  • Put in a big bowl and add lime juice, olive oil, corriander (if using).
  • Add any additional spices not mentioned, but be careful, the key is "fresh salsa"
  • Mix gently and refrigerate (or not).
  • Serve with chips or to accompany grilled chicken or fish.
  • Modify ingredient list to suit your taste, but the peach adds sweetness and the plum adds a bit of tartness and mouthfeel. Mangos are a good substitute if you cannot find fresh peaches or plums.
  • Do not even attempt in the winter or with store-bought vegetables. I only make it 2-3 month a year (sadly).
