Zucchini Torta

- Torta crust: shopping list
- 2 cups flour shopping list
- 3/4 cup butter, cut into pieces shopping list
- 3 tablespoons vegetable shortening shopping list
- 1/2 teaspoon salt shopping list
- 1/3 cup ice water shopping list
- Filling: shopping list
- 4 slices bacon shopping list
- 2 tablespoons bacon drippings shopping list
- 2 1/2 large zucchini (about 1 pound), thinly sliced shopping list
- 1 medium onion, chopped (about 1 cup) shopping list
- 2 cloves garlic, minced shopping list
- 7 large eggs shopping list
- 1 cup sour cream shopping list
- 1 teaspoon salt shopping list
- 2 cups cooked, cold rice shopping list
- 12 ounces New York sharp cheddar cheese, grated shopping list
How to make it
- Pre time includes chilling
- For torta crust: In a large bowl place flour, butter, shortening and salt.
- Blend until well-combined with a pastry cutter.
- Add ice water.
- Form into dough ball. Knead lightly a few seconds to distribute fat. Re-form into ball.
- Chill at least 3 hours.
- Divide in 2 and press into two 10-inch springform pans covering bottom and 1 1/2 inches up sides. Set aside.
- For filling: Cook bacon until crisp, drain, leaving 2 tablespoons fat. Add zucchini, onion and garlic and sauté over medium heat for 15 minutes.
- Gently stir occasionally. When it has cooked, you should have 21/4 cups.
- In a large bowl, beat eggs well.
- Add sour cream and salt and beat again.
- Stir in rice, cheese, cooked vegetables and crumbled bacon.
- Turn into 2 pastry shells and smooth top.
- Bake at 375 degrees for about 55 minutes or until golden brown and set.
- Let stand 5 minutes then loosen edges.
- Cut and serve. Can be eaten warm or cold.
