Kwanza Cornbread Recipe
This is a very moist and very tasty cornbread. Hope you will give it a try. We love it and know that you will too.

Ingredients
  • 4 tablespoons unsalted butter melted
  • 1 cup yellow cornmeal preferably stone ground
  • 3/4 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 can creamed corn
  • 1 cup buttermilk
  • 1 large egg well beaten

Directions
  1. Preheat oven to 450.
  2. Pour 2 tablespoons of the melted butter into a cake pan and bake for 5 minutes.
  3. Meanwhile in a medium bowl whisk together the cornmeal, flour, sugar, baking powder and salt.
  4. Make a well in the center of the mixture and pour the creamed corn, milk, remaining 2 tablespoons butter and egg into the well then stir until smooth.
  5. Pour the batter into the hot cake pan.
  6. Bake for 35 minutes.
  7. Remove from oven and let stand 15 minutes before serving.

Made this today--it was great! Took some pictures, but my oven doesn't brown well on top, but if you don't mind I may post a picture of a helping in a serving dish with a pat of butter on top.
