Lamb Chops With Gorgonzola Recipe
LAMB CHOPS WITH GORGONZOLA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Howell Estate in Longview Texas in 1994.

Ingredients
  • 18 lamb chops
  • 8 ounces gorgonzola
  • Sauce:
  • 8 ounces white wine
  • 6 ounces heavy cream
  • 8 ounces butter at room temperature
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup olive oil

Directions
  1. Toss lamb chops with salt, pepper and olive oil.
  2. Wrap exposed bones with aluminum foil so they do not burn then grill to desired temperature.
  3. Add wine to a sauce pot and reduce by half then add heavy cream and heat until thickened.
  4. Whisk in cheese and then butter until incorporated then add salt and pepper.
