Basque Lemon Chops With Tomatoes And Olives Recipe
BASQUE LAMB CHOPS WITH TOMATOES AND OLIVES This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Elmhurst Estate in Heath, Texas in 1981.

Ingredients
  • 6 lamb chops
  • 1/4 cup flour
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons Spanish olive oil
  • 1/3 cup dry white wine
  • 1 pound vine ripened tomatoes peeled seeded and chopped
  • 1/2 cup Spanish olives seeded and sliced

Directions
  1. Season chops with salt and pepper then dredge with flour.
  2. Heat oil in heavy skillet until light haze forms then add chops and cook 6 minutes per side.
  3. Transfer to heated platter.
  4. Pour wine into skillet and scrape up brown bits then stir in tomatoes and olives.
  5. Cook over medium heat 5 minutes then season with salt and pepper and spoon over chops.
