How to make it

  • 1. Core and peal apples. Slice them 1/3 inch thick and place them in a bowl. Sprinkle with about 1 Tablespoon of the lemon juice and the 3 Tablespoons of sugar. Toss well and allow to sit at room temperature for 30 minutes.
  • 2. Sift the flour andsalt together into a medium-size bowl. (Keep the sifter nearby.) Make a slight hollow in the center and add the egg yolks, 1 teaspoon lemon juice, and1/4 cup of the water. Mix with a wooden spoon. Then add the remaining 1/4 cup water and the melted butter, beating hard and pressing the batter against the bowl to break up lumps.
  • 3. Pour oil to a depth of 3 inches in a stockpot or dutch oven,"I used a deep-fryer" heat to 365*F
  • 4. While the oil is heating, beat the egg whites until they form stiff peaks. Fold tthem into the batter. Drain the apple slices in a sieve.
  • 5. When the oil reaches 365*F, take a handful of apple slices and drop them into the batter to coat completely. Using your fingers, pick up one slice at a time and allow the excess batter to drain off before dropping it into the oil. Do not crowd the pot, and keep the temperature between 350*F and 365*F. Cook until golden brown, about 3 minutes. Drain on paper towels and sprinkle with sifted sugar. Repeat with the remaining apple slices. NOTE: Do not use baking apples for this recipe.
