Watermelon Upside-Down Cake

- 2 tbs plus 1/2c butter, softened and divided shopping list
- 1/2 c packed brown sugar shopping list
- 1 c diced seedless watermelon (1/2 in) shopping list
- 2/3 c sugar shopping list
- 3/4 tsp vanilla extract shopping list
- 1 egg, beaten shopping list
- 1 1/4 c flour shopping list
- 2 tsp baking powder shopping list
- 1/8 tsp salt shopping list
- 1/2 c milk shopping list
How to make it
- Heat over to 350F. Melt 2 tbs butter; pour over bottom of a 9in round cake pan. Sprinkle with brown sugar; top with watermelon
- Beat remaining 1/2 c butter, sugar, and vanilla in large bowl at med speed until blended. Beat in egg.
- Combine flour, baking powder and salt in a med bowl. Beat into sugar mixture alternately with milk, beginning and ending with flour. Spread over watermelon
- Bake 30-35 mins or until cake pulls away from sides of pan, top is golden brown and toothpick inserted in center comes out with a few small dry crumbs attached. Cool on wire rack 5 mins. Turn out onto serving platter; cool completely.
