I love black pepper with fruit. Freshly ground black pepper has a lot of subtle flavors that are enhanced by sweet fruit. I use an Excalibur dehydrator which I love but it was pricey. For oven drying instructions look here: http://chocolateandzucchin... More

Ingredients
  • 6 peaches
  • 1/4 teaspoon sea salt
  • 1 1/2 teaspoons freshly ground black pepper

Directions
  1. Slice the peaches into 1/2 inch wedges. Toss gently in a bowl with the pepper and salt.
  2. Dry until only slightly flexible ~8-10 hours at 135 degrees F in a food dehydrator.
  3. Store in an airtight container or they will absorb moisture from the air.
  4. If you don't have a dehyrator, here are good directions for making dried fruit in the oven:http://chocolateandzucchini.com/archives/2006/11/poires_sechees.php

Oh yum, I love to pepper my canteloupe; never thought of peppering my peaches (probably because I always just eat them whole) but now I will - and I may even try out the fancy dehydrater I got for a quarter at a rummage sale years ago:)! Thanks!
