Alphabet Pot Roast Recipe
This dish was thought up when I was 11 years old. It's included in the first cook book that I published in 1990.

Ingredients
  • 3-4 lb. beef pot roast
  • salt and pepper
  • 1 can alphabet vegetable soup
  • 1/4 cup dry red wine
  • 1/8 tsp. dried basil
  • 2 Tbs. finely chopped parsley

Directions
  1. Sprinkle beef with salt and pepper.
  2. Place in slow cooker pot.
  3. In a small mixing bowl, combine soup, wine, and basil. Mix.
  4. Pour over meat.
  5. Cover and cook on low for 8-10 hours.
  6. Sprinkle with parsley.
  7. Slice meat.
  8. Sauce may be thickened with flour, dissolved in a small amount of water, if desired. (I don't think the 11 year old mind realized it then needed to be cooked longer to cook the flour).
  9. Makes 6-8 servings.
