The Sofrito is the main ingredient of the Puerto Rican food. We use it in almost all the dishes that are elaborate and stews, rice, meat, fish and chicken. Spanish version www.sazonboricua.com

Ingredients
  • 2 green peppers, seeded
  • 4 onions, cut into chunks
  • 3 heads of garlic, peeled
  • 12 sweet pepper, seeded
  • 25 leaves of fresh Cilantro
  • 25 sheets of l recao (Culantro)
  • 1 tablespoon salt
  • ΒΌ cup oil

Directions
  1. Mix all ingredients cut into large pieces in a food processor.
  2. Process until the desired consistency.
  3. Add salt and oil and mix well.
  4. Then pour the mixture into a container with lid and store in refrigerator.
  5. Use it to spice up their favorite foods.

That's a good one. I make sofrito but I think mine is the Spanish version.


Very nice recipe. I have made Cuban sofritos but never Puerto Rican. I am glad to finally know the difference. I will save this and try it soon... Jim
