This dish uses leftovers and is great as a leftover too. I make this a couple days after making a big chicken dinner (chicken can be cooked many ways) with mashed potatoes and use the leftover chicken and potatoes for this dish. The kids love it!

Ingredients
  • Onion chopped
  • Olive Oil
  • Flour
  • Milk
  • Lightly steam ½ to 1 cup each of diced up carrots and fresh cut green beans
  • Heat about 4 cups of left over mashed potatoes using milk to thin so they will smooth easily.
  • Frozen peas
  • 3 cups or so cooked chicken shredded/chopped (works great with any leftover chicken baked, grilled)
  • Salt and pepper
  • Season salt

Directions
  1. Sautee about half of a chopped Onion in a generous amount of Olive Oil (5-6 tablespoons at least) on medium-medium high heat.
  2. Add about 4 tablespoons of flour, sprinkle it around and then mix it into onion/oil mixture. Allow to cook for several minutes.
  3. Add about 2 cups of milk stirring frequently to make the sauce, add more if needed.
  4. Add salt and pepper to your taste.
  5. Add partially steamed carrots, green beans and frozen peas and stir.
  6. Add chicken and stir.
  7. In a sprayed casserole dish add sauce mixture.
  8. Spoon on mashed potatoes and smooth out so sauce mixture is completely covered.
  9. Use a generous sprinkle of Season Salt over mashed potatoes.
  10. Bake at 350 degree oven for 30 minutes or until completely heated through.
