Kohlrabi - Som Tam Style

- 1 tablespoon sugar (or less if that sounds like a lot of sweet) shopping list
- 3 tablespoons or more of fresh lime juice (I usually end up using more) shopping list
- 2 1/2 cups kohlrabi, peeled and shredded (I just shoot it through the food processor) shopping list
- 1 or more garlic cloves - minced shopping list
- 1 1/2 tablespoons fish sauce shopping list
- 1/2 teaspoon or more crushed red (dried) chili peppers shopping list
- cherry tomatoes - halved shopping list
- 2 tablespoons toasted crushed peanuts or almond slivers (Optional) shopping list
- salt and pepper to taste shopping list
How to make it
- Mix sugar, garlic, fish sauce, red pepper and the lime juice.
- introduce tomato halves and slightly smash them with a fork or potato masher.
- pour mixture over shredded kohlrabi and toss.
- salt and pepper and sprinkle nuts over the top and pop it in the fridge to "marinate". Toss it again before serving.
- shredded carrots can be substituted for the tomatoes.
- the longer this stuff sits the hotter and tastier it becomes - you may want to experiment with the amount of red pepper and garlic if you are sensitive to fire...Some like it hot...all ingredients can be adjusted to personal taste.
