Greek Beet and Potato salad

- 1/4 c. salad oil shopping list
- 2 tbsp. good wine vinegar or mixture of vinegar & lemon juice shopping list
- 1/4 tsp. dry mustard shopping list
- fresh ground pepper shopping list
- 4 c. diced hot cooked potatoes shopping list
- 2 c. diced cooked or canned beets shopping list
- 1 med. bermuda onion, finely sliced shopping list
- Before serving add: shopping list
- 1 tbsp. chopped capers shopping list
- 1/4 c. chopped dill pickle shopping list
- 1/2 c. ripe olives cut in lg. pieces from pit shopping list
- And 1 1/2 cups of one or a mixture of any of the following: shopping list
- green peas, cooked shopping list
- green beans, diced shopping list
- Flaked canned tuna or salmon shopping list
- Garnish:optional shopping list
- anchovies, green or black olives, parsley sprigs. shopping list
How to make it
- Prep does not include overnight chilling
- Blend the 4 first ingredients by combining them in a screw top jar and shaking vigorously to blend.
- Pour over the beets, potatoes, onion and peas
- Mix, cover and refrigerate overnight.
- Shortly before serving add: yur choice of any
- peas, beans or tuna or slamon, or just omit
- Then:
