Ingredients
  • 1 sliced onion
  • 1 boiled egg
  • 1 tbsp of laksa paste
  • 3 cups chicken stock
  • 1/2 cup low fat coconut milk
  • 12 large raw prawns peeled and tail intact
  • 150grams of thinly cut chicken breast meat
  • 200grams thick fresh rice noodles
  • 1 red capsicum sliced*
  • 90grams baby corn*
  • 90grams bean sprouts
  • 90grams snow peas*
  • Some fried bean curd or tofu*
  • coriander, mint and lime wedges to garnish
  • *Optional, can be replaced with any greenies or mushrooms

Directions
  1. In a wok or large saucepan, stir fry onion in a little stock for 2 minutes.
  2. Add laksa paste and cook stirring for 2 minutes then add remaining stock, coconut milk and bring to the boil.
  3. Simmer for 2 minutes then add prawns and chicken, cook for a while until thoroughly cooked.
  4. Add noodles, capsicum, corn and fried tofu.
  5. Simmer 2 min till prawn and chicken is cooked and the noodles are plump.
  6. Put in snow peas and sprouts.
  7. Divide into warm bowls and garnish with slices of boiled egg, herbs and lime wedges.
  8. Serve it while it's hot and dig in!

I would like to know how to make "Laksa Paste"? I think its much more fun to know how to make all the special parts of a dish. Laksa has a wonderful flavor and I'd love to know how to make the key ingredient. Thanks.
