Chicken With A Creamy Brie Bacon Tomato And Basil Stuffing Recipe
Chicken stuffed with brie, bacon and sundried tomato with fresh basil and a rosmary topping.

Ingredients
  • 1 Boneless Chicken Breasts
  • 3 slices of Brie
  • 1 slice of rindless bacon (thicker is better)
  • 1 sprig of fresh rosmary chopped
  • 1 clove of garlic finely chopped
  • Sun dried tomato paste or finely chopped sun dried tomatos
  • 4 large leaves of Fresh Basil
  • Salt
  • Pepper

Directions
  1. Slice chicken breast along the side so that it is almost cut in half but not quite.
  2. Open up chicken breast to place the stuffing inside.
  3. Place the slices of brie in the chicken
  4. Place the bacon on the brie
  5. Place the basil leaves on the bacon
  6. Grind a little black pepper on the basil
  7. Sprinkle half of the garlic on the basil
  8. Top the chicken with olive oil, salt and the rosmary
  9. Use the rest of the garlic on top of the chicken
  10. Bake in an oven preheated to 230c for 60 - 80 minutes or until hicken is cooked through and top is browning.
