Ingredients
  • 1 can Black Beans (rinsed and drained)
  • 1 medium Onion, chopped
  • 1 large clove Garlic, minced.
  • ½ lb Kielbasa
  • 1 large ripe
  • 1 large ripe tomato, peeled and chopped.
  • 1 tsp ground Cumin
  • 1 tsp Cilantro, chopped.
  • Salsa
  • 3 Fresh Ripe Tomatoes, chopped.
  • 2 Green Onions, chopped.
  • 1 tbsp Balsamic Vinegar
  • Salt and Pepper

Directions
  1. Combine all ingredients for the salsa and let stand while preparing the beans.
  2. Saute onions and garlic in E.V.O.O. until translucent, add Kielbasa beans and spices.
  3. Cook 8-10 minutes, then add tomatoes and cook until heated through
  4. Serve beans with a tablespoon of salsa and some sour cream on the side
