Sweet Lemon Butter Recipe

Ingredients

1/2 c butter

grated peel of one lemon

1/2 c fresh squeezed lemon juice

11/2 c sugar

1/4 tsp salt

3 whole eggs

3 egg yolks

Directions

melt butter in top of double broiler.

stir in lemon peel, juice, sugar, and salt.

lightly beat whole eggs with egg yolks

blend egg mixture with sugar mixture

cook over boiling water, beating continuously w/ whisk until thick and smooth, about 20 minutes.

cover and chill!
