Filet Of Sole With Tartar Sauce Recipe
FILET OF SOLE WITH TARTAR SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Massey Estate in Malakoff, Texas in 1992.

Ingredients
  • 1 pound sole filets, cut in serving size pieces
  • 1/2 teaspoon slat
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons butter melted
  • 1 tablespoon lemon juice
  • 1 teaspoon onion finely chopped
  • Sauce:
  • 1 cup mayonnaise
  • 2 tablespoons dill pickle finely chopped
  • 1 tablespoon fresh parsley snipped
  • 2 teaspoons pimento chopped
  • 1 teaspoon onion grated

Directions
  1. Preheat oven to 400.
  2. Combine all ingredients for sauce then set in refrigerator to blend flavors.
  3. Arrange filets in an ungreased baking dish and sprinkle with salt and pepper.
  4. Mix butter, lemon juice and onion together and drizzle over fish.
  5. Bake uncovered for 30 minutes then serve with tartar sauce.
