Toffee Banoffee Recipe
this is an old family favorite the pastry is light and the toffee is very moreish we love it and i hope u do too.

Ingredients
  • 2/3 cup butter
  • 2/3 cup of sugar
  • 1 egg
  • 1egg yolk
  • zest of 1 lemon
  • 3tbsp of brandy
  • 1tsp of cinnamon
  • pinch of ground cloves
  • 1 cup of toasted ground almonds
  • 11/4 cup of pastry flour or all purpose
  • 2 large bananas sliced
  • 1 can of condensed milk
  • 3tbls of brown sugar
  • tsp of vanilla essence or extract
  • 2tbls of whipping cream
  • 100mls whipping cream

Directions
  1. to make pastry cream butter and sugar together add 1 egg and 1 egg yolk and stir together add lemon zest and mix
  2. then add brandy cinnamon cloves almond and flour together once pastry comes together in a ball wrap in plastic kitchen wrap and refrigerate for an hour
  3. once chilled lightly dust the bench space with a little flour roll out to a little thicker than quarter of an inch then cut out to fit little tart cases or one big one
  4. then return the pie case or cases back to the fridge for 15 minutes
  5. then prick the bottom of the tarts all over and bake for 15 minutes at a 175
  6. slice bananas to line the base of the tarts
  7. in a pot pour condensed milk brown sugar and vanilla stirring over a medium heat cook for 10 minutes or until thick stirring at all times
  8. once thickened add 2tbls of whipping cream 2tbls of brandy
  9. allow to cool till just warm pour over bananas
  10. whip the remaining cream and top your pies place in refrigerator for 30 minutes then enjoy
  11. once thickened add 2 tbls of whipping cream 2 tbs of brandy and
