Mexican Confetti Dip Recipe
A delicious combination of crunchy beans, corn and vegetables with a sweet/sour vinegar dressing. Served with fritos or tortilla chips, makes a great snack or appetizer.

Ingredients
  • 2 cans mexican corn (or reg. whole kernel corn) 15.5 oz size
  • 1 can black eyed peas (15.5 oz)
  • 1 can pinto beans (15.5 oz.)
  • 1 can black beans (15.5 oz)
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/4 cup sugar
  • 1/4 cup corn oil
  • 1 cup apple cider vinegar

Directions
  1. Drain all beans and corn
  2. Combine all beans, corn, onion and green pepper in large bowl.
  3. Combine sugar, corn oil, and vinegar in a smaller bowl, and blend until
  4. sugar is dissolved.
  5. Pour over bean mixture and
  6. refrigerate over night or longer,
  7. Serve with Fritos or tortilla chips
