Smoked Salmon with Salsa Gluten Free

- smoked salmon shopping list
- 4 pieces of Atlantic salmon shopping list
- salt shopping list
- Chilli oil shopping list
- wood chips (fragrant) shopping list
- fresh herbs in season (for smoking) shopping list
- BBQ and rack shopping list
- salsa shopping list
- tomatoes, deseeded and roughly sliced shopping list
- cucumber, skinned and diced shopping list
- lime juice (to taste) plus extra for final dressing shopping list
- Chillies, combine 3 varieties, finely chopped shopping list
- coriander (cilantro) leaves to garnish, stalks finely chopped for the salsa shopping list
- spring onion (scallion), white parts only, minced shopping list
- salt shopping list
- avocado, diced shopping list
- olive oil (little bit) shopping list
How to make it
- SALSA
- Combine all ingredients, including the oil
- Use extra lime juice to dress the combined ingredients
- Top with the reserved coriander (cilantro) leaves
- Refrigerate till needed
- SMOKED SALMON
- Rub the salmon fillets with salt and chilli oil
- Place fragrant wood chips in the base of the bbq
- Bring them up to temperature
- Place your selection of fresh herbs on the wood chips
- Place a rack over the wood chips and herbs and place the salmon fillets on this
- Cover and cook for 5-6 minutes
- TO SERVE
- Place a layer of salsa as a base
- Place the smoked salmon on top
- Finish with some more salsa
- SIDES
- A simple mixed green salad (different types of lettuce roughly torn and mixed)
- Some crusty bread
- A bottle of wine ... enjoy!
