Smoked Salmon With Salsa Gluten Free Recipe
A great alternative for the bbq. It doesn't take long and while the fish is smoking you can easily make the salsa (or make it earlier).

Ingredients
  • SMOKED SALMON
  • 4 pieces of Atlantic Salmon
  • Salt
  • Chilli oil
  • Wood chips (fragrant)
  • Fresh herbs in season (for smoking)
  • BBQ and rack
  • SALSA
  • Tomatoes, deseeded and roughly sliced
  • Cucumber, skinned and diced
  • Lime juice (to taste) plus extra for final dressing
  • Chillies, combine 3 varieties, finely chopped
  • Coriander (cilantro) leaves to garnish, stalks finely chopped for the salsa
  • Spring onion (scallion), white parts only, minced
  • Salt
  • Avocado, diced
  • Olive oil (little bit)

Directions
  1. SALSA
  2. Combine all ingredients, including the oil
  3. Use extra lime juice to dress the combined ingredients
  4. Top with the reserved coriander (cilantro) leaves
  5. Refrigerate till needed
  6. SMOKED SALMON
  7. Rub the salmon fillets with salt and chilli oil
  8. Place fragrant wood chips in the base of the bbq
  9. Bring them up to temperature
  10. Place your selection of fresh herbs on the wood chips
  11. Place a rack over the wood chips and herbs and place the salmon fillets on this
  12. Cover and cook for 5-6 minutes
  13. TO SERVE
  14. Place a layer of salsa as a base
  15. Place the smoked salmon on top
  16. Finish with some more salsa
  17. SIDES
  18. A simple mixed green salad (different types of lettuce roughly torn and mixed)
  19. Some crusty bread
  20. A bottle of wine ... enjoy!
