Caramel Corn Cake

- 1 can (17 oz) cream style corn shopping list
- 1/2 cup packed brown sugar shopping list
- 3/4 cup of white sugar shopping list
- 3 eggs shopping list
- 1 cup vegetable oil shopping list
- 1 Tablespoon of baking powder shopping list
- 2 1/4 cup flour shopping list
- 1 tsp of baking soda shopping list
- 1 tsp of salt shopping list
- 1 tsp of cinnamon shopping list
- 1/2 cup of raisins (I like golden) shopping list
- 1/2 cup of chopped pecans shopping list
- frosting shopping list
- 4 tbsp of butter shopping list
- 1/2 cup packed brown sugar shopping list
- 1/4 cup milk shopping list
- 2 to 3 cups of powdered sugar shopping list
How to make it
- In mixing bowl, combine corn and sugars.
- Add eggs and oil.
- Beat until blended.
- Combine dry ingredients, then add to batter and mix well.
- Stir in raisins and nuts.
- pour into greased 9 x 13 pan.
- Bake at 350 degrees for 30 minutes until cake tests done.
- Cool thoroughly.
- Frost.
- Make Frosting by:
- Bring butter and brown sugar to boil over medium heat.
- Remove from heat and stir in milk.
- Stir in powdered sugar until desired consistency is acheived.
- Frost cooled cake.
- makes 12 - 15 servings
