How to make it

  • Saute chopped onion in a little olive oil and rice and lentils and water/stock, the bay leaf and some thyme. Cook for about 15-30 minutes till the lentils begin to soften.
  • Dice/chop the peppers or tomatoes. Mix it into the still-hot rice/lentil mixture. Put it in a baking dish. Put the cheese on top. Bake it until the cheese is melted.
  • Bake about 20 minutes at 350* till everything softens and the cheese melts
