Lentils and rice are baked together with peppers and onions with cheese on top.

Ingredients
  • 4 green peppers or tomatoes
  • 1 chopped onion
  • olive oil
  • 1 cup brown rice
  • 1 cup lentils
  • 4 cups vegetable broth or water
  • bay leaf
  • thyme
  • Shredded cheese

Directions
  1. Saute chopped onion in a little olive oil and rice and lentils and water/stock, the bay leaf and some thyme. Cook for about 15-30 minutes till the lentils begin to soften.
  2. Dice/chop the peppers or tomatoes. Mix it into the still-hot rice/lentil mixture. Put it in a baking dish. Put the cheese on top. Bake it until the cheese is melted.
  3. Bake about 20 minutes at 350* till everything softens and the cheese melts
