Lentils Peppers And Onions With Cheese

- 4 green peppers or tomatoes shopping list
- 1 chopped onion shopping list
- olive oil shopping list
- 1 cup brown rice shopping list
- 1 cup lentils shopping list
- 4 cups vegetable broth or water shopping list
- bay leaf shopping list
- thyme shopping list
- Shredded cheese shopping list
How to make it
- Saute chopped onion in a little olive oil and rice and lentils and water/stock, the bay leaf and some thyme. Cook for about 15-30 minutes till the lentils begin to soften.
- Dice/chop the peppers or tomatoes. Mix it into the still-hot rice/lentil mixture. Put it in a baking dish. Put the cheese on top. Bake it until the cheese is melted.
- Bake about 20 minutes at 350* till everything softens and the cheese melts
