Cape Pickled Fish Recipe
an easy on the side dish, that can be made well in advance and is a winner at any bbq, church or family do

Ingredients
  • 1 kg firm white fish, skinned and boned
  • juice of one lemon
  • 15g butter
  • 3 onions thinly sliced
  • Sauce
  • 175ml good vinegar -white
  • 150ml water
  • 15ml mild curry powder
  • 3ml turmeric
  • 2 bay leaves
  • salt and pepper
  • 25ml apricot jam (jelly)
  • 6 peppercorns
  • grated rind of one lemon

Directions
  1. cut fish into chunks
  2. gently fry onions in butter
  3. remove and fry fish for a few min- not too long
  4. combine sauce ing
  5. bring to the boil
  6. lower heat and simmer for 10 min.
  7. place fish and onions in shallow dish and pour sauce over the top.
  8. allow to cool and refrigerate for at least 12 hrs before serving
