Wine Jelly Recipe
A soft gelatin, very delicate. Somehow it lives on.

Ingredients
  • 1 1/2 c water
  • 1 package (envelope) unflavored gelatin
  • 2 lemons
  • 1 orange
  • 1 c sugar
  • 2 c sherry or madeira
  • 1 c heavy cream

Directions
  1. In a bowl large enough to mix all ingredients, combine 1c of cold water with the gelatin and let soak for 10 minutes.
  2. Boil the remaining water.
  3. Juice and strain the fruit. Set the juice aside.
  4. Slowly add the boiling water to the gelatin, stirring constantly.
  5. Add the wine and juice and stir
  6. Add the sugar.
  7. If you are using a sweet wine you might want to use less sugar, so taste before adding all of the sugar.
  8. Mix thoroughly.
  9. Pour into a mold, or champagne glasses, cover and chill until set.
  10. Just before serving, sweeten the cream to taste and whip into peaks to serve on top.
