How to make it

  • Prepare tart pan with removable bottom by greasing well with butter
  • prepare fruit in large bowl and sprinkle sugar over it so it will create it's own juice.
  • place almonds in food processor and pulse til finely ground
  • add flour, sugar and salt
  • pulse three or four times
  • add butter and pulse till well blended
  • add water and egg yolk and pulse till it forms a ball (If it seems a little dry add water a few drops at a time)
  • wrap in plastic wrap and chill for 25 minutes
  • on lightly floured surface roll out dough to about 1/8 inch
  • place in tart pan and press on bottom and up sides. Trim and crimp
  • prick bottom and sides
  • you may want to cover bottom with parchment paper and pie weights or beans to keep it nice and flat.
  • bake in a 450 degree oven about 15 minutes or untill it is golden brown.
  • remove from oven and cool completely
  • in large mixing bowl beat cream cheese till softened
  • add cream and beat till light and fluffy
  • add sugar and extract and beat til well blended
  • scrape into cooled tart shell and smooth top with spatula
  • chill till firm
  • drain juice from fruit
  • measure and if needed add enough orange juice or any juice to make
  • 1 1/2 cp
  • in small sauce pan mix juice, lemon juice and cornstarch.
  • bring to boil and cook stirring constantly til thick and clear
  • cool slightly and stir in fruit
  • spread over top of tart
  • chill thoroughly
  • remove pan sides and serve
  • you can top this with more whipped cream if you like but it really stands by itself. It is absolutely delicious.
