Carrot Cake

- 200 g Plain flour shopping list
- 2 tsps baking powder shopping list
- 1 tsp baking soda shopping list
- 1 tsp fine salt shopping list
- 2 tso ground cinnamon shopping list
- 1/2 tsp ginger shopping list
- 250 g golden brown sugar shopping list
- 250 ml olive oil shopping list
- 4 Medium eggs , beaten lightly shopping list
- 300 g Grated carrot shopping list
- 150 g canned pineapple , drained and chopped shopping list
- 50 g walnuts , chopped shopping list
- 50 g raisins shopping list
- lemon rind , grated ( Used from 1 Lemon ) shopping list
- icing shopping list
- 150 g cream cheese shopping list
- 1 tbsp fresh lemon juice shopping list
- Grated rind of a lemon . shopping list
- 200 g icing sugar . shopping list
- 50 g butter . shopping list
How to make it
- Sift all the dry ingredients
- Pre heat the oven to 180 degrees
- Grease a loaf tin
- Beat the eggs , oil and sugar .
- Add the flour . Beat well .
- Add the remaining ingredients .
- Pour the batter into teh loaf tin . Bake for above 90 mins .
- Cool it .
- Icing
- Beat all the ingredients until smooth enough and pour over the cake .
