How to make it

  • preheat oven to 400 degrees
  • dredge kidneys with flour
  • In an ovenproof skillet, over high heat,heat oil. Sear kidneys 5 min. stiring occasionally. Mix in cranberries. Sprinkle with raspberry vinegar. cook 1 min. . Salt & pepper to taste. pour both broths into skillet. bring to a boil. Transfer to oven cook for 10 min. or until kidneys are tender. serve

    No no, you *don't* soak them beforehand--that's what makes them smell. Mainly, don't overcook them.

    I think I read something about soaking the kidneys beforehand so they don't smell. Can anyone help out with how to prep the kidneys?

    Knew someone who used to cook Kidney Yes they were English From London. I Could never get past the smell. What about this dish??? Does the vinegar and cranberries do the job.Sounds interesting may give it a go.
