Veal kidneys with cranberries

- 1 lb veal kidneys, trimmed ,cut into lobes shopping list
- 1/4 cup whole wheat flour shopping list
- 1 tbsp. veg. oil shopping list
- 1 cup fresh or frozen cranberries shopping list
- 2 tbsp raspberry vinegar shopping list
- salt & pepper shopping list
- 1/3 cup beef broth shopping list
- 1/3 cup chicken broth shopping list
How to make it
- preheat oven to 400 degrees
- dredge kidneys with flour
- In an ovenproof skillet, over high heat,heat oil. Sear kidneys 5 min. stiring occasionally. Mix in cranberries. Sprinkle with raspberry vinegar. cook 1 min. . Salt & pepper to taste. pour both broths into skillet. bring to a boil. Transfer to oven cook for 10 min. or until kidneys are tender. serve
