So easy i;m almost ashamed to post it. My wife loves this dish so i make it once or twice a week.

Ingredients
  • 1 lb. ground round (I like 10% fat, but 15% works well also)
  • 1 tablespoon whole black pepper corns
  • 2 shallots
  • 5 largish button mushrooms
  • 2 pads of butter
  • 2-3 cups red wine (I don't measure it, just pour out enough)

Directions
  1. Spread your pepper corns out on your chopping block and crack them with the back of your cast iron frying pan.
  2. Mix the cracked pepper corns in with your meat well. Best if it gets to sit in your fridge for a couple of hours but you can use immediately.
  3. Peel and coarsely chop up your shallots
  4. Wash and chop up your button mushrooms
  5. Split your ground round into two patties
  6. Get your frying pan good and hot and sear the patties on both sides well
  7. Turn down the stove, finish cooking patties and remove from frying pan
  8. Add butter and sauté the chopped shallots well
  9. Add the chopped button mushrooms and sauté briefly
  10. Deglaze the frying pan with the red wine and reduce the resulting sauce to a consistency you like.
  11. Pour sauce over patties and serve.
